Should I Use Lime or lemon Juice for Caesar Salad?

People use lemon juice for their Caesar Salad. But the truth is, it should be Lime Juice. Lime juice was originally used. The confusion began when Caesar Salad became popular in the United States.

A key ingredient (lime) in the recipe changed as the salad moved north to the United States. Despite the fact that the original Caesar salad used lime, lemon juice is commonly used. Who Invented Caesar Salad? Do You Mean the Origin or History of Caesar salad?

Caesar Cardini, an Italian immigrant who ran restaurants in Mexico and the United States, is widely credited with inventing the salad. His daughter Rosa claimed that her father invented the salad at Caesar’s (at the Hotel Caesar in Tijuana, Mexico) during a Fourth of July rush in 1924 when the kitchen’s supplies were depleted.

Cardini made do with what he had, adding the dramatic flair of “by the chef” table-side tossing. Cardini was living in San Diego, but he was also working in Tijuana, where he could avoid Prohibition’s restrictions. A number of Cardini’s employees claim to have invented the dish. Caesar Salad – Recipes, How to Prepare and Dress Caesar SaladTijuana’s Caesar’s Hotel on Avenida Revolución “Home of the legendary Caesar’s Salad,” says a poster inside Hotel Caesar’s. Julia Child claimed to have eaten a Caesar salad at Cardini’s restaurant as a child in the 1920s. Dorothy Kilgallen, a newspaper columnist, wrote of a Caesar with anchovies in 1946, differing from Cardini’s version:

Gilmore’s Steak House will introduce New Yorkers to the Caesar salad, which is all the rage in Hollywood. It’s a time-consuming concoction that includes (zowie!) lots of garlic, raw or slightly coddled eggs, croutons, romaine, anchovies, parmesan [sic] cheese, olive oil, vinegar, and plenty of black pepper.

According to Rosa Cardini, the original Caesar salad did not contain anchovy pieces (unlike his brother Alex’s Aviator’s salad, which was later renamed Caesar salad); the slight anchovy flavor comes from the Worcestershire sauce. Cardini refused to put anchovies in his salad.

Cardini’s daughter claimed in the 1970s that the original recipe called for whole lettuce leaves to be lifted by the stem and eaten with the fingers, coddled eggs, and Italian olive oil.

Although anchovies were not used in the original recipe, they are now a common ingredient in modern recipes and are frequently emulsified in bottled versions. Many companies now manufacture and market bottled Caesar dressings.

The trademark brands “Cardini’s,” “Caesar Cardini’s,” and “The Original Caesar Dressing” are all claimed to date back to February 1950, despite the fact that they were only registered decades later, and more than a dozen varieties of bottled Cardini’s dressing are available today, each with a different ingredient.
