Necessity, they say is the mother of all inventions. This saying is just true. The scarcity and the high cost of tomatoes both the paste and the fresh in my area led me to try an alternative.
I mean, I tried new method of making rice-stew without using tomatoes.
To start with, I am not the person who discovered cooking or making stew with carrot and cucumber. I don’t know when people started making stew with the combo. I heard about it the moment we couldn’t afford the high cost of tomatoes. I also saw where it was prepared, it popped up on my social media news feed.
So, my family tried it.
We have eaten it for more than 4 times this year. The first time I used the combo, cucumber and carrot for my family Sunday’s stew. It was yummy!
This is not to exaggerate. Cucumber and Carrot Stew for rice tastes better than using tomatoes. To prove to you about my claim, we have added this new discovery to the family menu.
Here in my personal blog, I will be teaching you again you how to make a delicious carrot and cucumber stew in just 5 steps. I mean, when there is no tomatoes, you can device an alternative and still make a yummy stew.
How to Make Your Stew Using Cucumber and Carrots
Recipe:
- Cucumber
Carrots
Oil
Crayfish
Meat/chicken /fish
Curry leaves (optional)
Ginger and garlic (optional)
Shombo pepper/ Tatashe (red chilli)
Salt
Spices (your choice) .Step 1:Peel the green back of your cucumber and cut into pieces that will allow you to blend. Wash your carrot and also chop into pieces and blend together with the cucumber.You know cucumber is more than 80 percent water content. But you may need to add a little water into your blender for the first time when you start blending. Afterward, continue blending with the juice-pulp.Note, there is no rule that says you must peel your cucumber. It is a matter of choice. In fact, the last cucumber stew I made, I didn’t peel the green back.Step 2. Blend your Cucumber and Carrot together.
I blended the carrot and the cucumber together and the sauce looks exactly like blended fresh tomatoes
Step 3. Get a cheese cloth or sieve.Alternatively, you can boil the blended combo to dry just as we dry our blended fresh tomatoes.
But, look, why will you boil and waste fresh juice? Haven’t you heard about carrot and cucumber juice? This combo is a medicine on their own, and just like cabbage juice, you can use it to kick stomach ulcer on the butt. You may read it here about fermented cabbage juice and how it can be used to cure stomach ulcer.
Back to the point, get a cheese cloth and press out the juice water. Pour the water extract in glasses and store in your refrigerator for consumption. For us, we serve the family meal together with the carrot and cucumber water extract. Delicious!
The paste or the pulp extract is what you need for your stew.
Step 4: Boil or Steam your Meat/chicken /fish as desired and keep.
While you are steaming your animal protein, spice as you desire.
Step 5:
Add your cooking oil in the pot. Add onions, ginger, garlic, etc, and fry as desired (optional or the same way you make your tomatoes stew). Add your cucumber and carrot paste and stir until they are absolved with the oil and other ingredients.
Also, add your blended Shombo pepper/ Tatashe (red chilli).
This step is very important. I have received feedback from my followers on my Profiles when I shared this. They were all asking how I was able to make the stew reddish even without tomatoes pastes.
This is very simple. You see these native red chilli, Shombo pepper/ Tatashe, they will do the reddening and also the thickening. For those who do not know what tatashe and shombo red chilli look like, here are they.

What are the Advantages of using Cucumber and Carrots for Stew over Tin Tomatoes Paste?
Carrots and cucumber stew has many gains over the usual tomatoes stew we are used to. They are:
1. Tomatoes paste are just made of flour, color, sweetener and preservatives while carrots and cucumber are natural vegetables.
2. Carrot and cucumber are medicine on their own.
3. The combo are very much cheaper and have better taste.
4. For people complaining of heart burn after eating tomatoes red stew, with cucumber and carrots, it is a nay.
Are there any side effects of cucumber and carrots stew?
Like they say, there is nothing in this life without side effect, especially when the stuff is used in an abused manner. Even the drugs that save lives are said to be potential poison.
However, there is no known bad side or side effect of using cucumber and carrots for stew except for people who are allergic to the combo. If you belong to the group who react adversely after consuming cucumber or carrots, you are advised not to eat it.
Again, there an argument that cooking fruits or vegetables that should be eaten raw may produce more enzymes which in turn harm the humans. However, this claim doesn’t hold water because people have been cooking fruits and veges like apple, cabbage, carrots, paw-paw, etc.
For safety reason, we advised earlier to sieve the blended cucumber and the carrots and use the pulp or paste. This is to avoid long heating while trying to dry the water.
In Summary
Cucumber and Carrots stew is an amazing new discovery for me. It can be used to serve white rice, white beans, white yam or cold pap. It is affordable and healthier.
How can you prove any of these I have mentioned if you didn’t give it a trial? Just give it a trial. Have a nice meal and remember to share.
